Coconut Lime Cupcakes

I have a love/hate relationship with coconut.

I just love the flavor...delicious!!
But I hate the texture of shredded coconut.

Which is exactly why I am swooning over these cupcakes.
They are full of yummy coconut flavor, without that texture.
I used canned coconut milk and coconut extract for this recipe.

Plus, they have a splash of lime for even more tropical goodness!


 Coconut Lime Cupcakes

Yield: 16-18 cupcakes

Coconut Lime Cupcakes
  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 3/4 cup sugar
  • 1/2 cup oil
  • 3 tablespoons lime juice
  • 1 teaspoon coconut extract
  • 3/4 cup coconut milk
  • 2 teaspoons lime zest
Coconut Cream Cheese Frosting
  • 8 ounces cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 1 1/2 teaspoons coconut extract
  • 3 cups powdered sugar

Instructions
Preheat the oven to 350 degrees. Prepare a muffin pan with paper liners. In a medium bowl, combine the flour, baking powder, baking soda and salt. Set aside. In a large mixing bowl, beat the eggs. Add sugar, oil, lime juice and coconut extract; mix well. Add half of flour mixture, beat. Add half of coconut milk, beat. Add remainder of flour, then remainder of coconut milk, beating after each addition. Mix in lime zest. Pour batter into cupcake liners, filling each 2/3 full. Bake for 16-18 minutes. Allow cupcakes to cool on a rack.

In a large bowl, cream butter and cream cheese until light and fluffy. Add coconut extract and mix well. Add the powdered sugar one cup at a time, and beat until fluffy.

I love this combination of flavors,
and the coconut cream cheese frosting is SO good!

TIP: Garnish each cupcake with a lime slice,
and squeeze the lime over the cupcake before you eat it.
You will thank me for this!

  3. I'm with you. Love the taste, not a fan of the texture. So these are right up my alley. I have a chocolate pudding recipe that calls for coconut milk and it's DEEEEElicous. I really should remember to use it more often! I'm pinning these. Oh - and the ladybug is too cute.

  7. So I will have to make these when Joseph is out of town. PURE DELCIOUSNESS is what they look like. And I must know WHERE did you find those liners?!?! Lime green polka dotties?!? I must have them. And if I hadn't read the visitor part i would have thought the ladybug was fake. She is too cute just hanging out there on the edge taking a nibble! Usually I am sad when Joseph goes out of town, now unfortunately I can't wait! :) Something to look forward to!

  9. So we are having a luau themed church picnic and I want to make a theme inspired dessert. How do you think these would taste if you substituted pineapple juice for the lime juice??? These sound delish but just wondering what you think!

  11. These are spectacular... I must try those... They look like the Mojito Cupcakes i am planning to cook.
    I feel the same way as you about coconut : love the taste, hate the texture. I also love coconut water that you can drink directly from the nut in countries like Brasil.
    Try a frosting made with coconut milk when you get the chance... absolutely delicious !

  12. Hi Robin! Love the ladybug and cupcakes! Very fun! I saw on somebody's site they used nut cups too for their cupcakes (like your gorgeous green dotted ones) and I tried it, but I found that they had wax or a light coating of plastic in them, so they not only melted ever so slightly onto the cupcake pan, and then the cupcake stuck to the wax when people were trying to eat it. :-( Did you encounter that problem?

    1. Hi Melissa! I did not have a problem with the nut cups. They didn't stick any more than a regular cupcake liner. Maybe it depends on the brand?? This was the first time I have used them for cupcakes, and I will definitely do it again! :0)
