I have a love/hate relationship with coconut.
I just love the flavor...delicious!!
But I hate the texture of shredded coconut.
But I hate the texture of shredded coconut.
Which is exactly why I am swooning over these cupcakes.
They are full of yummy coconut flavor, without that texture.
I used canned coconut milk and coconut extract for this recipe.

Plus, they have a splash of lime for even more tropical goodness!

I love this combination of flavors,
and the coconut cream cheese frosting is SO good!
TIP: Garnish each cupcake with a lime slice,
and squeeze the lime over the cupcake before you eat it.
You will thank me for this!
I am including this next photo just for fun...
While I was taking photos outside, I had a little visitor.
She liked my cupcakes. :0)
These cupcakes would be great for a tropical theme or beach party.
Enjoy!

These look great. I am the same way about coconut. Love the flavor...not the texture. Will have to try these...love your pictures!
ReplyDeleteGorgeous! And, well, you know me and coconut. And I think lime and I are becoming BFFs too...
ReplyDeleteI'm with you. Love the taste, not a fan of the texture. So these are right up my alley. I have a chocolate pudding recipe that calls for coconut milk and it's DEEEEElicous. I really should remember to use it more often! I'm pinning these. Oh - and the ladybug is too cute.
ReplyDeleteMy mouth is literally watering right now and I love the cute cupcake paper.
ReplyDeleteWhat a great recipe!!!! I can't wait to make these!!! The cupcake cups are adorable too! I'm pinning these too.
ReplyDeleteHi there!
ReplyDeleteI found your website about a week ago and must have visited it more than 20times already!!!
It is great fun looking at your incredible recipes and gaining inspiration!
I love lime and my fiancé is a particular fan so I reckon I'll have to give these a whirl!!!
Thanks for being so much fun to follow
ZoBird (from the uk and wishing I had USA ingredients on tap :) )
Thanks for your sweet comment! I hope you and your fiance enjoy the coconut lime cupcakes. :0) And I had to tell you that I have a soft spot for the British...I lived in the UK for 18 months. It is on my wish list to go back for a vacation...someday!!
DeleteSo I will have to make these when Joseph is out of town. PURE DELCIOUSNESS is what they look like. And I must know WHERE did you find those liners?!?! Lime green polka dotties?!? I must have them. And if I hadn't read the visitor part i would have thought the ladybug was fake. She is too cute just hanging out there on the edge taking a nibble! Usually I am sad when Joseph goes out of town, now unfortunately I can't wait! :) Something to look forward to!
ReplyDeleteBeautiful cupcakes!
ReplyDeleteYum. I was immediately drawn to these from the 36th Avenue! Two awesome flavors... one amazing cupcake. Cool.
ReplyDeleteSo we are having a luau themed church picnic and I want to make a theme inspired dessert. How do you think these would taste if you substituted pineapple juice for the lime juice??? These sound delish but just wondering what you think!
ReplyDeleteI love these! I must try them! The cups you chose are so cute, too. Would love if you stopped by my linky party to link it up!

Oh these look delightful!!
ReplyDeleteThese are spectacular... I must try those... They look like the Mojito Cupcakes i am planning to cook.
ReplyDeleteI feel the same way as you about coconut : love the taste, hate the texture. I also love coconut water that you can drink directly from the nut in countries like Brasil.
Try a frosting made with coconut milk when you get the chance... absolutely delicious !
Hi Robin! Love the ladybug and cupcakes! Very fun! I saw on somebody's site they used nut cups too for their cupcakes (like your gorgeous green dotted ones) and I tried it, but I found that they had wax or a light coating of plastic in them, so they not only melted ever so slightly onto the cupcake pan, and then the cupcake stuck to the wax when people were trying to eat it. :-( Did you encounter that problem?
ReplyDeleteHi Melissa! I did not have a problem with the nut cups. They didn't stick any more than a regular cupcake liner. Maybe it depends on the brand?? This was the first time I have used them for cupcakes, and I will definitely do it again! :0)
DeleteThese look fantastic! Can't wait to try out the cupcakes. :) Megan
ReplyDeleteYou are speaking my language....I love coconut anything and I have limes in my fridge right now. Totally making these this weekend. Found you through Something Swanky and glad I did! -Sarah @ Miss CandiQuik

ReplyDeleteCan't wait to make these Sat for a BBQ. What type of oil did you use? I'm a HUGE fan of coconut oil, think that would be ok in this recipe too?
