    2. To help make it more WW friendly, you may want to use Neufchatel instead of cream cheese. I usually don't taste the difference, when it is mixed with other things.

  2. rather than chocolate chips, you should try chocolate jimmies/ sprinkles. It works just like a funfetti cake, but they're all brown like the watermelon seeds :)

  10. I made this for my son's 8th birthday this evening and it was delicious!! Very moist. I think if your butter is too soft and melted then the icing will not turn out, but if it is at room temperature along with the cream cheese then it turns out just perfect. Thank you so much for sharing the recipe.

  12. Just made the cake. Yes, like right now.:) I made into a bundt cake, moist and deliciouse, thanks. The icing was a bit thin, which made it difficult to decorate. But I made it work. I marbled the orange an white icing w a spoon . Not beautiful but ok. Hope my guest like creamsicles. Thanks for recipe idea, grat throw back to my childhood.

    1. I actually made the blue ruffle cake before I started my blog! It was posted on my family blog at the time - no tutorial, just some pics. If you want to learn the technique, check out this video.. https://www.youtube.com/watch?v=MHYX0qXDVy0&feature=youtu.be

  24. This watermelon cake looks absolutely fabulous! I have been a watermelon freak since I was a kid visiting my great-grandparents' farm, where my sister, my cousins and I would sit in the rows and eat the melons straight off the vine. I really MUST try this cake!

  25. Thank you for this wonderful recipe. I made this for my sons birthday and he loved it. The only problem I think I came across was my frosting was not that fluffy. What should I do if this happens? I tried a bit more milk but it was still sort of thick and not that fluffy. Could it be because I did not have regular milk and used 2%. I am so excited I found this site, there are so many cakes I want to make :)

  28. For the Cinnamon Banana cake, can I use just egg yolks instead of the whole egg? I love these cakes but I want to make it healthy for my 1 year old's birthday.

  29. I made the Andes Chocolate Mint cake for my daughter's 25th birthday. Followed the recipe exactly and used a cake comb to make my frosting look like yours. It was the best cake I have ever baked and was so gorgeous until everyone got out their phones and made pics before my daughter cut it. Thank you for helping make a milestone birthday even more memorable!
