Earth Day Cupcakes

We do not inherit the earth from our ancestors, we borrow it from our children. 
- Native American Proverb

April 22nd is Earth Day!
Here is a fun and simple treat to help you celebrate.


Prepare a white cake mix.
Divide your cake batter into 2 bowls.
Color one bowl of batter green, and the other blue.

Line your cupcake pan with baking cups.
Alternating colors, drop spoonfuls of batter into the cups.


Bake your cupcakes and let them cool.


Cut off the tops.

 
Press a small heart-shaped cookie cutter into the center of the cupcake.


Use a spoon to scoop out the cake inside the heart,
and eat the scraps.

 
Fill the heart-shaped cavity with red frosting.


Replace the cupcake top and enjoy!

  1. i love these, and at first thought the heart was fondant, but i love it's frosting! (so much more edible :)

    1. maybe you have never had marshmallow fondant - I find it more tempting than icing. Lots of recipes on the internet - also called MMF - but basically melted marshmallows and powdered sugar. Easier to make than icing!

  3. These are AMAZING! I've seen the idea before for Valentine's Day cupcakes but I love it even more with this concept of loving our Earth we live on/Earth Day. Amazing job! :)

  24. This is the first time I've ever seen that "cut the top off, make something cute on the inside" thing you did. What a great idea! Its like a surprise inside! Not only is this project great for Earth day, but (since I work for an international Non-Profit agency) I can see it as part of a World Mission party or something of that nature. Or with an engagement ring hidden inside with a note "You are my world..." Alright enough of me being corny.   31. They are great!!! I just made them but they didn't came out as good as yours... I made a game with those for my nephews: only one of the cupcakes as a heart and is the winner... The other ones have yellow stars... If I was better at using the piping bag, I would have added clouds just as in the sattelite pictures of planet earth.

  38. Blueberries make a great "blue" when mixed into a muffin mix. I don't know what could make a natural "green"? Any ideas?

    1. Hello! Late reply to your post ~ but I've been experimenting lately with "natural" food colorings... can you share what you've learned so far?
      Right now I'm mastering PINK with hibiscus flowers & beet juice :)

  42. I love these cupcakes. They're beautiful, but it seems every time I make cake the tops turn kid of tan/brown in the oven. How did you keep the colors so bright and nice during baking?!
