Watermelon Flavored Cake

My oldest daughter gave me the inspiration for this cake.
That girl seriously loves watermelon!
 

When I told her that I was decorating a cake to look like a watermelon,
she excitedly asked, "Will it taste like watermelon too?"

Umm...
could I make a cake that tastes like watermelon?
After some brainstorming and research, the answer is "Yes!".

Watermelon puree and Jell-O give this cake it's flavor, and it is fantastic!
And the frosting is SO good...I just want to eat it with a spoon!


Watermelon Cake 
adapted from Chaos in the Kitchen
Ingredients
    Watermelon Cake
    • 1 box white cake mix
    • 1 (3 oz.) box of watermelon Jell-O powder (reserve 2 teaspoons for frosting)
    • 1/2 cup watermelon puree
    • 1/2 cup water
    • 1/2 cup oil
    • 4 eggs
    • 1/2 cup mini semi-sweet chocolate chips (optional)
    • red food coloring
    Watermelon Cream Cheese Frosting
    • 8 oz. cream cheese (softened)
    • 1/2 cup unsalted butter (softened)
    • 5 cups confectioners' sugar
    • 2 teaspoons watermelon puree
    • 2 teaspoons watermelon Jell-O powder
    • red and green food coloring
    Instructions

    Preheat oven to 350 degrees. Line the bottom of 2 eight inch round pans with wax paper, and spray the sides with cooking oil.

    In a large bowl, combine cake mix and Jell-O. Add water and oil; mix on medium speed. Add eggs, one at a time, beating well. Add watermelon puree and beat until blended. Add red food coloring a little at a time, until you reach desired color. Place chocolate chips and a teaspoon of flour in a ziploc bag; shake to coat. Fold the chocolate chips into the batter. Pour into pans and bake for 30-35 minutes.

    In a large bowl, beat cream cheese and butter together. Beat in watermelon puree. Gradually add sugar and Jell-O, beating until smooth. Color 1/3 of the frosting green, color the remaining 2/3 the same color as the cake.

    Things to Note:
    • To make puree: Cut chunks from the center of a watermelon and remove any seeds. Put them in a blender and hit the puree button!
    • The chocolate chips in my batter sunk to the bottom while baking, and didn't quite achieve the "seeds" look I was going for. After I posted this recipe, several astute readers gave me the solution to that problem: Coating the chocolate chips with a small amount of flour keeps them from sinking! But I think I will leave out the chocolate chips in the future.
    • Trim the brown edges off the cake before frosting.
    • Use pink frosting between the layers and on the top of the cake. Spread green frosting on the sides and outer edge of the top. Press mini chocolate chips on top for seeds.

    20. Came across cake on Pinterest, but wasn't properly logged in so couldn't post comment. I agree with Stephanie (above). If you put chocolate chips in a bag filled with flour and shake to coat them - they won't drop to bottom of cake. Once baked you won't see the white flour on chocolate chips.

      Works also with raisens which could be substituted if anyone doesn't like chocolate chips. Is there, however, ANYONE who doesn't like chocolate chips?

      QUESTION: When you say 2t Jello - do you mean 2t of the Jello in powdered form or 2t of the "prepared" jello with water already added?

    31. Made the cake today and just had my first piece. It was FAB! will be making it again for sure.
      I was going to add the chocolate chips after it cooked, but forgot and just added the chips when I frosted the cake in the middle and on top, so I guess my was seedless (kind of). LOL!
      About 5 or so for my son's friends stopped by when I was cutting the cake, they all loved it too.

I got all the ingredients to make the watermelon cake except i have searched high and low for the watermelon Jello. can it be made without the jello and still taste as good or maybe sub another type of jello. Was so excited to make this for a party. Never thought i would not be able to find any.

      1. Oh, I'm sorry! The flavor won't be as strong without the Jell-O. I have also seen "Melon Fusion" Jell-O...a watermelon, honeydew and cantaloupe mix. That would be the next closest thing.

    61. I would love to make this for a gathering we are going to tomorrow but searched 4 different grocery stores and cannot find watermelon Jell-O anywhere! I got some of the melon fusion, but not sure how it will work since it is green. I'm thinking green plus the red food coloring will make it look like one nasty watermelon! I guess I will have to go with my backup dessert and hope I can find the Jell-O for our next gathering!

    65. i love this cake its really easy to make and to make it look more like a watermelon after i put the green icing on i dabbed some more food coloring on the sides (i use wiltons food coloring for my cakes so its easier and thicker)and lightly spread it to give it more of the dark and light green color like a real watermelon

I made this today and it tasted great i just had to change a couple of things. never good at making frosting so bought premade and added little bit of jell-o to it and the watermelon i have bought at 3 different stores this summer so far my family got sick on each one so to avoid that agian we just used the jell-o flavor. Still tasted great and looked great.

    76. We made this cake for a friend's birthday and had so much fun! Ours wasn't as beautiful as yours, but it was really cute to brighten up a rainy day. Very tasty and moist texture!
      Ended up with a LOT of leftover icing, which was a resoundingly popular outcome as I'll have no trouble finding a use for it.
      We also skipped the chocolate chips because regardless of how cute the idea is, none of us think watermelon goes with chocolate. Ultimate rationale was that the watermelon we bought was seedless anyways. We just put sprinkles on top. Sprinkles are always winners.

      Well enjoyed by everyone in attendance, and the birthday girl herself insists that we'll have to make it again sometime. Thank you so much for posting this delightful recipe!

    85. I just made the cake as cupcakes for my daughter's birthday. Couldn't find watermelon Jello (next time I'll order it online). I used the new melon fusion - very subtle flavor.,.. and it's green! I added twice as much puree in the frosting and got a bit more flavor. I wonder if they aren't discontinuing the watermelon in favor of the melon fusion?

      1. I made a watermelon buttercream icing.
        3 sticks unsalted butter, at room temperature
        6 cups powdered sugar
        2 tsp watermelon Jell-O powder
        1/2 tsp pure vanilla extract
        6 Tbsp watermelon juice
        Red/Green food coloring.

        Beat the butter until creamy. Add the jello powder, and then the powdered sugar, (1/2 cup at a time), and continue to beat until smooth. Add the watermelon juice, one tablespoon at a time, and beat until reaching your desired consistency. If it is too thick, you can add a little bit of milk or heavy whipping cream. slowly so you dont make it too thin. Separate into 2 bowls and add food coloring

    87. I made this today and it was a big hit. I will make this again, but:
      - I will use 1/2 green and 1/2 red frosting because I wound up with too much red and not enough green.
      - And I might use a less sweet frosting (maybe miracle icing) because I thought this was way too sweet (though some others disagreed.)
      - Unfortunately coating the chocolate chips with flour did not work to keep them from sinking to the bottom of the cake.
      - I did use an extra egg, and I substituted 1 cup of melted butter for the oil, because I heard those were tips for making a box cake taste more like a bakery cake. It turned out well ... next time I will also use milk instead of water.
      Thank you for the recipe - all my friends were very impressed, even though my cake decorating skills are less than stellar.

      - Next time I will not trim the brown edges off the cake before frosting, as the recipe suggests. I will slice a thin layer off the top of the bottom layer just to make it flat on top, but when I trimmed the edges it just created crumbs on the side which mixed in with the frosting and made it difficult to frost. And I don't think the edges taste bad, so why trim them?

    91. I'm planning to make this for my niece's third birthday next week, but I have a question.

      I try to avoid using boxed mixes, but I also imagine that if I just go ahead and add the watermelon puree and jello mix to a different cake recipe, it will probably mess up the solid/liquid proportions and not necessarily come out well.

    108. Hi I tried to make them in cupcake form, but it sank in the middle after baking it @ 180 c for 18 minutes, but the taste was amazing.

    109. I made this cake for the fair and I got a huge ribbon. The only thing I did not do was watermelon Jell-o, instead I used strawberry Jell-o. AMAZING color with sprinkles on it. (It kind of looked like a sweet sixteen cake.)

    111. I am excited to try and make this cake. I found the watermelon jello at Walmart. I have a question. I am rather amateur at decorating cakes. I am wondering about getting pink and green frosting where they shouldn't be. Do you have any tips for how you kept them so cleanly separate? How did you do the band of green around the top?     112. I have a quick question! My experience with watermelon puree is that you end up with a very watery mess. In the past I have strained it to remove most of the water before using the puree. Do you recommend this? Or did you factor the water in the recipe? Thanks!

    118. Made this cake for my daughter's first birthday and it was a hit. It had a light, refreshing watermelon taste.

      I did a few minor changes. Used half the frosting. Also, split that frosting into 1/2 green and 1/2 red. And only trimmed the tops of the cakes and not the sides... I placed the cakes trimmed sides downwards when frosting.
