Eggnog Cupcakes with Nutmeg Frosting
by
Ingredients
Eggnog Cupcakes (Yield: 22-24 cupcakes)- 1/2 cup unsalted butter (room temperature)
- 1 1/2 cups granulated sugar
- 3 eggs
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 cup eggnog
- 1 teaspoon rum extract
- 1 teaspoon vanilla extract
- 1 (8 oz.) package cream cheese (room temperature)
- 1/2 cup unsalted butter (room temperature)
- 4 cups confectioners' sugar
- 2 tablespoons eggnog
- 3/4 teaspoon nutmeg
Instructions
Preheat oven to 350 degrees. Line two cupcake pans with paper liners.
In a large bowl, cream the butter and sugar together. Beat in the eggs. In a separate bowl, whisk together the flour, salt, baking powder, baking soda, cinnamon and nutmeg. In another bowl, mix the eggnog, rum extract and vanilla. Alternate adding the dry and wet mixtures to the butter/sugar/eggs until thoroughly combined.
Fill cupcake liners 2/3 with batter and bake for 18-20 minutes. Remove from pans and allow to cool completely on a wire rack.
In a large bowl, beat the cream cheese and butter until creamy. Mix in the eggnog. Mix in the confectioners' sugar a little at a time, until thoroughly combined. Add the nutmeg.

I just made these, turned out perfectly. I used 1/2 tsp real rum instead of the extract. Didn't have cream cheese so I just made buttercream frosting, still using the egg nog and nutmeg like you suggested. Delicious!!! Thank you for the recipe.
